Sweet potato fries with home made mayo



Sometimes is nothing better than creamy home made mayo with crispy oven roasted fries with a cold beer.

Home made mayo is soooo simple, if you have a hand held blender. I found this recipe on http://yummysupper.blogspot.com/, mine has an added anchovy element. The key to this recipe is that all ingredients must be room temperature, the egg, the mustard, the vinegar or lemon juice,  anchovy, and the oil. The anchovy is optional, I just love the saltness it brings.

Tip, make sure not to use a strong tasting oil, I tried sunflower seed oil and its over powered the entire mayonnaise. Canola or sunflower or a very light olive oil.

1 whole egg, room temperature
1 anchovy file + 1 tbsp of the oil from its container
0,5 tsp salt
a grind of pepper
0,5 /1 tsp mustard (I recommend dijon)
1 tbsp white wine vinegar or lemon juice or half of each
2,5 dl oil

Simply add all the ingredients + 1/4 of the oil, blend and then slowly add the remaining oil. Blend till you get the consistency you prefer, I like my not too stiff.



The oven baked sweet potato fries are just as simple.

for 2 people
Set your oven to 200 degrees Celsius (32F)
2 large or 3 medium sized sweet potatoes.
(If you prefer regular potatoes you just need more, depending on the size of the potatoes between 4 - 8.)
2 tbsp oil (canola or sunflower oil)
0,5 tbsp salt
grind of pepper

Cut your potato into strips or wedges or even slices, like thick chips. Spread them over an oven dish, add a drizzle of oil, salt & pepper. Mix the potatoes with the oil, salt & pepper. Depending on how you cut the potatoes, the cooking time will vary, so keep an eye on them, you want them golden, crispy and not soggy or soft. For the strips I made it took a good 40-45min.



Tip, sometimes when I use regular potatoes I like to add some thyme and garlic to add flavor.
