Salmon Burger with Courgette Rosti replacing the bun


I had this idea, I saw a program of Ms. Dahl, a must see, where she made fish burgers. She used mayo to keep the burger together and despite how unappetizing this sounds it looked yummy. So when my the fish counter at my favorite food store had salmon file on sale I jumped at the opportunity to try the recipe for myself.



Courgette Rosti, so simple.

for 2 people
1 medium sized courgette or 2 small.
grind of pepper
salt - as much as preferred
0,5 tbsp oil


Grate your courgette. Gather the grating into your hands and squeeze out the water. Then form 2 patties of the courgette gratings. Add the oil to your pan and spread it to cover all areas of the pan. Then carefully add the courgette patties. Let these patties cook at least 3-4min on one side, the point is to get a crispy outside and soft inside. Add your pepper and salt.


Once the one side has become golden and a little burnt on the edges flip it over, be very careful at this point, the patties are very fragile! cook for another 3min on the other side, adding pepper and salt, and then again CAREFULLY slide out of the pan.


For the salmon burger I decided I wanted to have capers and thyme in the mix. Ms. Dahl used a white fish and used dill. The result was a very succulent creamy salty fish burger, I was very happy with the result.

for 2 people
300gram salmon file
12-16 capers (depending on your preference)
1 stick of thyme, leaves pulled off
salt
peppar
2 tbsp good quality mayo
oil to fry

Begin by chopping the salmon file into about 1cm cubes (0.4 inch). Add the cubes to a bowl, add the capers, salt 7 pepper, thyme and mayo. Mix.

Add oil to your pan, even if you have a non-stick pan you need a little oil or the mayo will start to stick and burn in your pan and make a big mushy mess of the beautiful salmon. Make 2 patties of the salmon mix and put into a medium hot pan. Fry for about 3min on 1 side then carefully slip for another 2-3min on the other side. You want the salmon tender and juicy not dry.



Final burger assembly

You will need 2 handfuls of ruccula
2tsp lemon juice
1tbsp oilive oil 
1 ripe avocado

Toss the ruccula with the lemon juice and oil
Place the courgette rosti on a plate, add the salmon burger . Chop the avocado roughly, add this atop the burger. Finally add the ruccula.
