Sesame Salmon & Oven Roasted Asparagus

This is such a simple yet yummy and feel good dinner or lunch option. As asparagus now is in season i am trying to get it into all my meals, yum!




I am loving quinoa at the moment so I used it here as the base for the dish.

ingredients for 2 people

2 salmon files
1 bundle of asparagus (about 10)
2 dl quinoa
2 dl frozen peas
sesame oil to rub on salmon
sesame seeds to coat the salmon
mixed salad with dressing

salad dressing
1 tsp dijon mustard
lemon juice (half a lemon)
1 tsp vinegar - white wine or apple not balsamic
2 tsp tamari or regular soy sauce
2 tbsp extra virgin olive oil

1. Heat your oven to 180 C.
2. Wash the asparagus and place on baking paper and sprinkle with olive oil and sea salt. They take +/- 15 min in the oven. Don't leave them in the oven while you prepare the rest, as they will continue to cook even once the oven has been turned off.
3. Cook the quinoa and add the frozen peas at the last cooking minute, the steam will defrost and cook them. Allow the quinoa to cool while you cook the salmon. You want it luke warm so it dosen't make the salad all soft and limp.
3. Rub sesame oil onto the salmon, and roll it in the sesame seeds.

4. Heat a frying pan and once its warm place the salmon in it and allow it to fry on each side till the seeds have gone golden/brown. The pan should be on medium / low heat so the seeds can get a golden/brown color and the salmon not over cook and go dry.
5. Prepare the salad dressing and then mix it in the salad.
6. Plate and enjoy!
