This dish is a bit of a cheater, as I use ready made wakame salad (Japanese seaweed salad mixed with sesame and chili). However, its a healthy lunch or even dinner option, that really hits the sushi/japanese food cravings. My husband makes this dish when he is alone at home, to me that shows that it's easy enough and yummy enough for the rest of the general public to enjoy.
what you need, for 1 portion:
100 grams wakame salad (you could ask a local Japanese restaurant if your local Japanese food store doesn't sell it)
1/2 avocado
1/2 tinned tuna or (smoked) tofu
0,5 dl brown rice (for this dish I prefer round grained vs. long grained, it's creamier in texture)
1/4 of a regular sized cucumber
drizzle of soy or tamari suace
sprinkle of roasted sesame seeds.
1. Cook the rice, make sure it cooks till its creamy, not just cooked and dry. You can add a tiny bit more water towards the end.
2. Chop up the cucumber + avocado
4. Once the rice has cooked place it in a bowl and let it cool slightly. You want it to be luke warm.
5. Once the rice is cooled add the wakame on-top, then the cucumber and avocado. If you want add a drizzle of soy or tamari sauce and a sprinkle of sesame seeds.
6. EAT
