To me blini's are just soooo luxurious. The moment I think if blinis I think, caviar and champagne. Yum!
makes about 20
0,5 dl buckwheat flour
0,5 dl white unbleached flour
1 dl milk or water (lukewarm)
10 gram fresh yeast
pinch of salt
1 egg yellow
3 eggs whites
1 tbsp melted cooled butter
suggestions to serve with the blinis:
sour cream
caviar or other fish eggs (salmon can be good)
chopped chives or chopped red onion
smoked salmon or haddock or both!
smoked mackerel (crumbled - check for tiny bones in the file)
Crumble the yeast into the luke warm milk or water. add the cooled butter. Mix. Then add the flours, egg yellow and salt. Allow to sit in a warm place for 2 hours, I didn't have patience for this, I left it for about 30min. You want to mix to begin to rise.
Meanwhile whisk your egg whites stiff. Once the dough has risen, gently fold the egg whites into the mix.
Heat a non stick pan, if you dont have a non stick grease the pan lightly. I measured 1 tbsp per blini, this made perfect small blinis. Once the blinis are done, you assemble each blini with various toppings. so good.
