One of many tuna spreads

 This is such an easy bread spread that can be used for picnics, pre dinner drinks or just slap dash right onto a fresh slice of bread. there are many variations of ingredients you can use, I will list some.

This specific mix I used what I had available the main unchanging ingredient being the tinned tuna. Always choose tuna in olive oil instead of in brine as its much juicier;
1 tinned tuna
few drops of fresh lemon juice
1/2 tbsp dijon mustard
salt & pepper
2 tsp good quality mayonnaise
2 basil leaves
3 stalks of parsley
1 cherry tomato
5-8 small pitted black or green olives (don't go for the cheap ones, no taste)
1/2 spring onion, using the greener half
few drops of tabasco or a small pinch of chili flakes
1 tbsp extra virgin olive oil

The best part is that you just add all to a blender and wizz it, and your done. Taste perhaps more mayo, lemon juice or pepper? Spread it on crackers or on fresh bread or even add it to some cold pasta and mix.

You could also add half a stalk of fresh celery, or replace the fresh cherry tomato for 1 sun dried tomato, capers are always a nice addition, you can use other fresh herbs such as coriander or thyme (just make sure to pluck the leaves of the stalk and only use 1 stalk). Instead of spring onion you could use chives or a small amount of red onion.
