Skagen Rora - Swedish recipe

This is an all time favorite of my husband, and myself. It's really easy yet feels very luxurious.
A little bit if home on a toast.

This feeds can feed 2 as on 2 slices of toast, however it could easily fee more on smaller slices of toast. You could even just make them bite size.

200 gram shrimps, preferably smaller icelandic shrimps which you have to peel yourself.
Dill, depending on how much you like dill, I used about 3 tufts (stalks)
2-3 tbsp fish eggs (cheap caviar, no need for the real thing)
1 dl creme fraiche
Lemon juice
salt & pepper
1/4 of a red onion
2 slices of thin toast.

  1. Peel the simps.
  2. Chop the onion, small.
  3. Place shrimp, onion, fish eggs and creme fraiche in a bowl, mix.
  4. Toast the bread.
  5. Add the dill, lemon juice, salt and peppar. Taste, add more lemon juice, dill or seasoning.
  6. Add ontop of the toast and eat with a glass of ice cold sauvignon blanc.
