Happy healthy lunch


This is another of my 'rabbit food' favs. Redbeet is the main player, grated raw. I love the combo of redbeet and fresh ginger & soy so my dressing has both. After you have had this lunch you will feel good.

1 person
1 medium red beet
2 celery stalks (including the stalk leaves)
handful of tauge (sprouts)
roasted sesame seeds

Simply grate the redbeet, chop the celery stalks and put into an appropriate sized bowl. Then sprinkle the tauge sprouts and sesame seeds on top.

dressing for 12 portion
grated fresh ginger
1tbsp tamari soy (or regular soy sauce)
1 tbsp apple vinegar
1 tsp mustard (preferably dijon)
2 tbsp extra vergin olive oil (if possible, cold pressed)

Mix these ingredients in a cup or high edged bowl with a fork, whisking it thick. Then pour over the salad.

Simple pleasure. Enjoy.
