The best part is you can make a big batch and eat it for lunch or dinner several times! That will make many home cookers happy not to have to think of a new dish & go shopping for it.
You could replace the sweet potatoes for pumpkin or regular potatoes, you could skip the celery if you're not a fan, you could add courgette. Basically its one of these soups that you use what you have in the fridge, really.
Here are the ingredients I used for the soup:
2 medium sized sweet potatoes
2 celery stalks
6-8 button mushrooms
1/3 broccoli head & stalk
1 medium yellow onion
1 chicken or veg stock cube
1/2 Liter of water
salt & pepper
drizzle of oil
1 mushroom stock cube - could be replaced with another veg or chicken
2 dl pre-soaked & cooked barley - you can add the barley uncooked but I wasn't sure how long it would take and I hate when a fresh soup with veggies in it has mushy veg.
- Begin by chopping all your veggies into the size you like.
- Drizzle some cooking oil into a large pot, and fry off the onion till shinny.
- then add all the rest of the veg, fry off for 2-3min, season with salt & pepper.
- Add the water & the stock cubes and then add the barley.
- Cook for approx. 30-40min on a low heat. If you get a lot of foam on the top of the soup - scoop it off.
- Taste and season with more salt & pepper if you feel it's needed.
Enjoy with a big chunk of fresh bread!
