Fluffy pancakes made from quinoa, oat, almond flour

This rates as angel food to me. With the added value of being healthy & gluten free! This is a recipe I have taken from one of my favorite food blogs, Sprouted Kitchen. I made my own adjustments but basicallty she is the one to credit if you make these.



Ingredients:
1 dl almond flour (ground almond)
1 dl quinoa flour
1 dl oat flour (ground oats)
2,5 tsp baking powder
pinch of salt
3 dl yoghurt or milk, half & half can be used
2 eggs, separated
2 tbsp palm sugar
1 tsp vanilla sugar
Zest of 1 lime
1,5 tbsp of melted coconut oil or butter

Toppings are unlimited. Let your imagination run wild. I love to use maple syrup as a sweetner but honey or palm sugar or jam will also do nicely.


  1. Mix all the dry ingredients. 
  2. Mix the yoghurt, egg yolks, oil/butter and zest. 
  3. Blend the wet with the dry.
  4. Whisk the egg whites till stiff and fluffy. 
  5. Carefully turn the egg white into the bowl with the batter mix. 
  6. using a large frying pan, melt a little oil/butter, then add approx. 1/2 dl batter to the pan. You should be able to fry 2-4 pancakes at once.
