Ingredients:
1 dl almond flour (ground almond)
1 dl quinoa flour
1 dl oat flour (ground oats)
2,5 tsp baking powder
pinch of salt
3 dl yoghurt or milk, half & half can be used
2 eggs, separated
2 tbsp palm sugar
1 tsp vanilla sugar
Zest of 1 lime
1,5 tbsp of melted coconut oil or butter
Toppings are unlimited. Let your imagination run wild. I love to use maple syrup as a sweetner but honey or palm sugar or jam will also do nicely.
- Mix all the dry ingredients.
- Mix the yoghurt, egg yolks, oil/butter and zest.
- Blend the wet with the dry.
- Whisk the egg whites till stiff and fluffy.
- Carefully turn the egg white into the bowl with the batter mix.
- using a large frying pan, melt a little oil/butter, then add approx. 1/2 dl batter to the pan. You should be able to fry 2-4 pancakes at once.
