Nothing more to say but peanut butter & chocolate are a pair made in food heaven. They are meant to be. So these cookies are heavenly. Soft, chewy, salty, sweet. When the rain pours outside on a summers day these will bring some sun shine to you. The best part is they only take 15 minutes to bake and about 15 to make so all in all you only need 30 minutes and your in heaven. To be honest the dough is also really yummy.
These are not part of my "healthy, less sugar and butter' sweet recipes, for these I don't cut corners. Although I do use spelt flour and brown sugar, as that seems to make me think it's slightly better for me. At the end of the day sometimes we just need a little indulgence, life's too short to live without some goodness in my opinion.
To make these little buggers you need:
75 grams room temperature butter
1 1/2 dl brown sugar
1 tsp vanilla sugar
1 egg
70 grams chocolate, I used 70% but you could use lighter and even white
1 1/3 dl peanut butter
2 dl oats
1 dl spelt flour
2 tsp baking powder
pinch of salt
- Pre heat your oven to 175 degrees.
- Place the soft butter and sugar in a bowl and using your fingers mix into a mushy grainy mix. if you have a kitchen aid you could use it. Personally, I prefer a la natural mixing.
- Add the egg and mix with a fork or with an electric whisk or again with your kitchen aid.
- Add the oats and peanut butter, mix.
- Chop the chocolate into the size you prefer it to be in the cookies. Add to the rest and mix.
5. You should be left with a messy dough, taste to make sure its sweet enough for you and bear in mind that all doughs and sweet mixes are always sweeter before they are baked.
6. spread baking paper onto an oven tray.
7. Using a spoon scoop some of the dough in the bowl into the baking paper.
8. Bake for 15 minutes. Allow to cool and then make yourself some tea or pour a glass of milk and dunk the cookies in, sit back and heaven.
