Quesadillas for the soul

We all know I like healthy but once in a while I need some soul food, and to me this is one of those dishes that just hits that spot. 
The best part is it quick and easy to make. You don't have to have guacamole with it or even sour cream but having both and even some salsa on the side bring it up a notch.

This is paired perfectly with a cold beer both in the middle of winter or summer.



All you need is:

6 flour tortillas (I managed to get whole grain - of course)
200 grams gruyer/gouda or other strong aged cheese
200 grams buffalo mozzarella or parmesan (yes, I know what your thinking they are both very very different in texture and flavor but I have done it with both and both versions are delish)
handful of coriander leaves
half a fresh chili or drizzle of tabasco
slices red onion or spring onion


  1. Place 1 tortilla in a pan, no oil or other fat needed, you want to toast not fry the quesadilla. medium heat should do it. the first, like pancakes, will take longer to get a golden color on both sides and for the cheese to properly melt. Be patient, its worth the wait!
  2. Distribute the cheese over the surface of the tortilla. a good handful will do, you want it spread evenly but not too close to the edges as the cheese will melt out that way anyhow. 
  3. Add the chili, sliced red onion and coriander.
  4. Add the top tortilla and slightly press down. 
  5. Allow to toast till the bottom is golden/brown and then flip, carefully!
  6. Now allow the same toast time on the other side, then slip onto a plate. 
  7. ReDo the above process!
  8. Once your quesadillas are done, slice dip in guacamole, sour cream and sink back, this is time for the soul to enjoy. 

for guacamole
1 ripe avocado
6 cherry tomatoes or 1 regular tomato
salt & pepper
1/2 garlic clove
1/3 of a red onion
1 tsp fresh lime juice

few stalks of coriander
1/3 fresh chili or a few drops of tabasco



  1. Chop the red onion finely. 
  2. Chop chili finely, if you prefer less spicy take out all the little seeds, make sure you do not touch them and if you do wash your hands and avoid your eyes for a while. 
  3. slice the cherry tomatoes into 1/5, if you use a regular tomato chop into small pieces, getting rid of the mid section. 
  4. Half the avocado and twist, scoop out the avocado into a bowl and with the back of a fork mash. Depending on how smooth or chunky you want your guacamole you mash till you get the consistency you prefer. 
  5. Add salt, pepper, chopped onion, chili, coriander, chopped tomato and a little lime juice. Taste. Adjust the lime, salt & pepper and chili if needed. 

Guacamole to me is another soul food, heavenly!
