This is not a hold back kind of recipe, it calls for real butter and sugar and white flour and no substitution will do, believe me I have tried multiple times and ended up with a dry, hard, bland crust.PIC
This pie is so perfect, the crust is thin and crumbly and ever so slightly sweet with a hint of salt, heaven! the pear is soft and juicy and if served with a little ice cream this is just my cup of tea.
For this pie you will need the following ingredients:
3 dl unbleached flour / white spelt flour
100 grams cold butter
2 tbsp sugar
2 tsp vanilla sugar
1 egg
3 large pears - they should be ripe
2-3 tbsp sugar
0,5 tsp cinnamon
1 dl apricot marmalade/jam
+ 2-3 tbsp water
- Pre-heat the oven to 200 degrees Celsius
- Place the flour and butter in a bowl and begin to crumble the butter so that it and the flour becomes a grainy mix.
- add the 2 tbsp sugar and vanilla sugar.
- Add the egg to the butter and flour, mix.
- Form the dough into a ball, and place it in a round pie form and begin to spread the dough up the edges using your thumbs. The dough needs to cover the bottom on the form and rise up the edge of the form.
- Place the pie in the oven for approx 12min. It should come out pail and only just slightly hardened.
- Slices the pear into thin slices and then place them in the bottom of the pie.
- Drizzle the cinnamon and 2-3 tbsp sugar over the top of the pie.
- Heat the marmalade in a pan on low heat and add the water, then brush the liquid marmalade over the top of the pear slices.
- Bake in the oven for approximately 25 min, if you want the color slightly more golden increase the heat till 225 degrees Celsius for the last 5-8min.
- Allow the pie to cool before eating.
