Home Made Pizza


I love making my own pizza, the smell spreads through your home, filling your nostrils and making your stomach grumble. The best part is you can make lots so you can have cold pizza the day after, yum!

I usually use regular flour, a mix of whole wheat and white (none bleached), preferably biological but I happened to find biological durum flour, the same used to make pasta, which makes excellent crispy pizza .

You can have any of your own toppings, let your imagination run wild. Tuna, pineapple is loved by some, I myself love olives, parma ham and fresh ruccula with a drizzle of olive oil on top right after the pizza comes out of the oven!

I make my pizzas a thin as possible as they invariably rise in the oven and thick pizza means I only get to eat less pieces, yepp that me, greedy for more.

for the dough, to make 2 large pizzas:
25 gram yeast (dry or fresh)
1 0,5 dl luke warm water
1 tbsp olive oil
1 pinch salt
4 dl flour

1. put oven on, 200 degrees C.
2. MIx the yeast with the luke warm water, mix till the yeast has dissolved.
3. add the salt and half the amount of flour. Mix.
4. Add another half of the flour left, work the dough till it's shinny and smooth.
5. Allow the dough to rise for 25-30min, cover with a clean kitchen towel.
6. Use the left over flour to roll out the pizzas.

Tip. Pat some flour onto your rolling pin and onto the work surface before adding the dough. Also rolling directly onto you're baking paper makes it easier than having to move it once its rolled out from the work surface onto the baking paper.

for the tomato sauce (Vital):
1 tinned tomato
1 medium onion
pinch of sugar or drizzle of honey/agave
salt pepper
2 sticks of fresh thyme
1 tbsp olive oil
1-2 cloves garlic

1. Chop the onion.
2. Lightly fry the onion in some olive oil, till glossy and soft.
3. Add the tinned tomato.
4. Add the garlic, either chopped finely or crushed or minced.
5. Add the salt, pepper & sugar/honey/agave.
6. Allow to cook for approx 20min.
7. Taste, add more salt or pepper if needed.

To assemble the pizza:
1. Add 1 dl tomato sauce to each pizza, spread thinly. Too much tomato sauce and the crust will not get crispy.
2. Add your ingredients.
3. Cook the pizza till the underside of the pizza has become hard, the crust is hard and your ingredients have cooked, melted, approx. 15-25min.

Pizza Bianca is also a nice option, that excludes the tomato sauce.

I also made variations with sliced asperagus, frsh ruccula once it's come out of the oven with a drizzle of olive oil.  Another great version I made was with strong gruyer & kalamata olives. YUM!

I dropped this asparagus topped pizza, that's why it looks like it does. It still tasted yummy.
